Ingredients
5 small zucchinis
½ large onion
1 can whole corn kernels
1½ cups Rebel & You Farm Style Cottage Cheese
1 tbsp Italian mixed herbs
⅓ cup pesto
Salt & pepper
2 eggs
1 cup self-raising flour
Oil (for cooking)
Method
Step 1
Grate zucchini and squeeze out excess moisture (don’t skip this part).
Step 2
Add diced onion, corn, cottage cheese, eggs, herbs, pesto, salt & pepper. Mix.
Step 3
Stir through flour until combined.
Step 4
Heat a pan with 1–2 tbsp oil.
Scoop mixture in, cook until golden (about 4 mins each side), flip gently.
Step 5
Stack them up and top however you like — we went with more cottage cheese, relish & parsley Makes 15 Fritters
