Inside Victoria's Dairy Country

You open the fridge. You grab your cottage cheese. Easy.

But between that tub and the paddock is a whole industry most of us never think about, so let's take a quick road trip. 🚜

Victoria - Australia's dairy heartland

Australia has dairy farms all over the country, but Victoria is the clear leader, producing around 60% of the nation's milk. Dairy is one of the state's biggest agricultural industries, and a lot of the milk, cheese and yoghurt you see on shelves started life here.

So why Victoria? It comes down to three things: rain, grass, and know-how. Cows do best on fresh, green pasture, and Victoria has the climate to grow plenty of it.

A quick tour of dairy country

  • Gippsland (the east): Lush rolling hills and reliable rainfall make this one of the greenest corners of the state, and one of its best-known dairy regions.

  • The South West: Coastal pastures and a mild climate, with farming traditions that stretch back generations.

  • Northern Victoria: Irrigation keeps the paddocks productive, even when the weather isn't playing along.

Three regions, three landscapes, one shared goal: great milk.

Family farms are the backbone

Behind the big numbers are people. Many Victorian dairy farms are family businesses, with knowledge passed down through generations. Early starts, 365 days a year, in all weather. The cows don't take weekends off.

We think that's worth celebrating. When you buy food made with locally sourced dairy, you're supporting the people who work hard to keep it going.

From milk to cottage cheese: the short version

Wondering how it all becomes cottage cheese? It's simpler than you might think:

  1. Fresh milk is collected from the farm.

  2. Cultures are added, which cause the milk to separate into soft curds and liquid whey.

  3. The curds are drained and gently handled to keep their texture.

  4. Creaminess is added back in and the cottage cheese is packed fresh.

That's the dairy world doing what it does best: turning simple ingredients into something nourishing. And because there's so little in the recipe, the quality of the milk shows up in every spoonful.

Why this matters to us

We'll be honest: we're a bit nerdy about the supply chain. Knowing where our dairy comes from, and who produces it, is part of how we keep our promise of ingredients you recognise (and can read!), without the B.S.

The more you know about what's in your fridge, the better you can feel about what's on your plate.

You're holding more than a tub of cottage cheese. You're holding a bit of Victoria's dairy story. 💛
