Cottage Cheese Flatbread Wraps

  • 1 Cup Cottage Cheese

  • 2 Eggs

  • Optional: Garlic Powder & Italian Seasoning & Salt

Method:

  1. Simply Preheat the oven to 200°C. Line a baking tray with baking paper.

    Blend together the cottage cheese, eggs, and seasonings.

    Spread the Cottage Cheese evenly across the baking tray (don't leave any gaps!)

  2. Bake in the preheated oven for 20-25 minutes & remove from the oven and allow to cool for 10 minutes.

  3. Fill it with whatever ingredients you desire. Avocado, eggs, smoked salmon, rocket or roasted veg for a meal that adapts to any time of the day!


Hot Honey Cottage Cheese Beef Bowl - Serves Two

  • 400g Kumura

  • 200g Lean Beef Mince

  • 1 tbsp of Paprika

  • 1 tbsp of Cinammon

  • Salt & Pepper

  • 1 tbsp olive oil

  • 1/2 packet of taco seasoning

  • 2 tbsp of Honey

  • Lemon Juice

  • 1 Avocado

  • 120g of Cottage Cheese

  • Fresh Parsley

Method:

  1. Cut the sweet potatoes (+ season with paprika, cinnamon, salt & pepper). Drizzle over the olive oil and mix well, before transferring to air fryer to cook at 200°C for 20-25 minutes.

  2. Add the mince to a pan on medium, break down and fry until brown

  3. Toss in the taco seasoning along with a dash of water and cook for 5 minutes

  4. Make the hot honey by mixing the honey, lemon juice and a pinch of chilli flakes (can add more spice if your feeling rebilious!)

  5. Portion the sweet potato and mince into two bowls. Add the fun toppings of cottage cheese, avocado, hot honey and parsely
